Soya Chunk Curry

A budget powerhouse: soya chunks simmered in a tomato-onion masala. Hearty, fully vegan and even better on day two.

Method

    Soak soya chunks in hot salted water until soft, then squeeze out all the water.

    Heat oil, crackle the cumin, then cook the onions until deep golden.

    Add ginger-garlic paste and the dry spices except garam masala; stir for a minute.

    Pour in the tomato puree and cook until the oil separates.

    Add soya chunks, peas and 300 ml water. Simmer until thick and glossy.

    Finish with garam masala and coriander. Serve with roti or rice.

Substitutions

  • Use a pressure cooker: one whistle after adding water replaces the 10-minute simmer.
  • Replace peas with diced capsicum or spinach.
  • For a creamier gravy, stir in 2 tbsp cashew paste at the end (+60 kcal per serving).
