Tofu & Edamame Stir-Fry
Crispy tofu, edamame and greens tossed in a ginger-soy glaze over noodles. Fully vegan and on the table in 14 minutes.

Method

Boil the noodles with the edamame and broccoli in the same pot, then drain.

Meanwhile, sear tofu in the neutral oil over high heat until golden on most sides.

Whisk soy sauce, vinegar, sesame oil, ginger and chilli flakes.

Add noodles and vegetables to the tofu pan, pour in the sauce and toss until glossy.

Top with spring onions and serve immediately.
