Air-Fryer Fish & Chips

Golden panko-crumbed cod and crisp chips straight from the air fryer, with minty mushy peas. The chippy classic with a fraction of the oil and 45 g protein.

Method

    Soak the chips in cold water for 10 minutes, then drain and dry very well on a clean tea towel. Toss with the oil and a pinch of salt.

    Air-fry the chips at 200°C (400°F), shaking the basket halfway, until golden and crisp. Tip into a warm dish.

    Meanwhile, set up three plates: flour seasoned with salt and pepper, beaten egg, and panko mixed with paprika and lemon zest. Pat the cod dry and coat in each in turn.

    Spray the crumbed cod with oil and air-fry at 200°C (400°F) until golden and the fish flakes easily. Return the chips for the last 3 minutes to re-crisp.

    Simmer the peas until tender, drain, then crush with the butter, mint, a squeeze of lemon and seasoning.

    Serve the fish and chips with the mushy peas, lemon wedges and a splash of malt vinegar.

Substitutions

  • No air fryer? Bake everything at 220°C (425°F) on lined trays: chips 30–35 minutes, fish 12–15 minutes.
  • Lower-carb: swap the chips for celeriac (celery root) chips to save about 30 g carbs per serving.
  • Use haddock, pollock or hake instead of cod — all similarly lean.
