Chicken Burrito Bowl

Method

Cook the rice; stir in lime zest and chopped coriander when done.

Rub chicken with oil, chipotle, cumin and salt. Sear until cooked through (74°C inside).

Char the corn in a dry hot pan, then warm the black beans with a pinch of cumin.

Mix tomatoes, onion, coriander and lime juice for a quick pico de gallo.

Rest and slice the chicken.

Divide everything into four containers; add sliced avocado just before eating.
