Thai Basil Chicken (Pad Kra Pao)

Bangkok's favourite street-food stir-fry: chicken, chillies and holy basil in a punchy sauce, with jasmine rice and a crispy fried egg.

Method

    Cook the jasmine rice.

    Mix oyster sauce, fish sauce, dark soy and sugar with 2 tbsp water.

    Fry garlic and chillies in the oil in a very hot wok for 20 seconds, add the chicken and break it up until no longer pink.

    Add the green beans and sauce and stir-fry until the beans are tender-crisp, then fold in the basil until just wilted.

    Fry the eggs in a little oil until the edges are lacy and crisp. Serve over the rice with the egg on top.

Substitutions

  • Make it vegetarian with crumbled firm tofu and mushroom 'oyster' sauce.
  • Skip the fried egg to save about 90 kcal per serving.
  • Use cauliflower rice for a low-carb version.
