Chicken & Avocado Wrap

Smoky seared chicken, smashed lime avocado and a Greek-yogurt ranch rolled into a whole-wheat tortilla. Nearly 40 g protein in a lunch you can eat one-handed.

Method

    Rub the chicken with the oil, paprika, half the garlic powder, salt and pepper. Sear in a hot pan until cooked through and charred at the edges.

    Rest the chicken for a few minutes, then slice thinly.

    Mash the avocado with half the lime juice and a pinch of salt. Stir the yogurt with the remaining lime juice, garlic powder and dill for a quick ranch.

    Warm the tortillas in a dry pan for 20 seconds a side so they roll without cracking.

    Spread each tortilla with avocado, add lettuce, tomato and chicken, drizzle with the yogurt ranch, then fold in the sides and roll tightly. Halve on the diagonal.

Substitutions

  • Vegetarian: swap the chicken for 250 g pan-fried halloumi or a tin of spiced chickpeas.
  • Lower-carb: use large lettuce leaves or a low-carb tortilla instead of whole-wheat wraps.
  • Meal-prep: grill a double batch of chicken and keep the avocado separate with lime juice pressed onto its surface.
