Chicken Caesar Salad with Greek-Yogurt Dressing

Crisp romaine, juicy seared chicken, garlicky croutons and a tangy Caesar dressing made with Greek yogurt instead of mayo. All the punch at 57 g protein.

Method

    Heat the oven or air fryer to 200°C (400°F). Toss the bread with 1 tsp oil and a pinch of salt and bake until golden and crunchy.

    Flatten the chicken to an even thickness, season and rub with 1 tsp oil. Cook in a hot griddle or frying pan until cooked through, turning once.

    Rest the chicken for 5 minutes, then slice.

    Whisk the yogurt, grated parmesan, anchovies, garlic, mustard, Worcestershire, lemon juice and the last 1 tsp oil. Loosen with a splash of water and season with black pepper.

    Toss the romaine with most of the dressing, then top with chicken, croutons, shaved parmesan and the rest of the dressing.

Substitutions

  • Vegetarian: swap chicken for 2 boiled eggs and 200 g roasted chickpeas per serving, and use capers instead of anchovies with a vegetarian hard cheese.
  • Lower-carb: skip the croutons and add toasted pumpkin seeds for crunch (about −14 g carbs per serving).
  • Grill or barbecue the romaine halves for 1 minute a side for a smoky charred Caesar.
