Jacket Potato with Tuna & Sweetcorn

A crisp-skinned jacket potato loaded with tuna and sweetcorn in a tangy Greek-yogurt dressing, with a crunchy side salad. The classic British lunch at 38 g protein and just 6 g fat.

Method

    Heat the oven to 200°C (400°F). Prick the potatoes, rub with the oil and a little salt and bake directly on the shelf until the skins are crisp and the insides soft.

    Shortcut: microwave the pricked potatoes for 8–10 minutes until soft, then crisp in the oven or air fryer for 15 minutes.

    Mix the yogurt, mayonnaise, lemon juice, spring onions and plenty of black pepper. Fold in the tuna and sweetcorn.

    Split the potatoes, fluff the insides with a fork and pile in the tuna mix.

    Serve with the leaves, tomatoes and cucumber dressed with a squeeze of lemon.

Substitutions

  • Vegetarian: swap the tuna for mashed chickpeas or 200 g cottage cheese.
  • Lower-carb: use a sweet potato or serve the tuna mix in lettuce cups with a smaller potato.
  • Air fryer: cook the oiled potatoes at 200°C (400°F) for 40–45 minutes, turning once.
