Lean Turkey Chili

A smoky, one-pot chili of lean turkey mince, two kinds of beans and peppers, simmered until thick. Over 40 g protein and 11 g fibre a bowl, and it gets better in the fridge.

Method

    Heat the oil in a large heavy pot over medium heat. Soften the onion and pepper with a pinch of salt.

    Turn the heat up, add the turkey and break it up with a spoon until no pink remains and it starts to brown.

    Stir in the garlic, chilli powder, cumin, paprika and tomato purée and cook for a minute until fragrant.

    Add the tomatoes, both tins of beans and the stock. Bring to a simmer, then cook uncovered, stirring now and then, until thick.

    Taste for salt and heat, then serve topped with a spoon of Greek yogurt and coriander. Keeps 4 days in the fridge or 3 months frozen.

Substitutions

  • Make it vegan with 2 extra tins of beans or 300 g soya mince instead of turkey, and vegetable stock.
  • Lower-carb: swap one tin of beans for diced courgette (zucchini) and extra pepper (about −12 g carbs per serving).
  • Slow cooker: brown the turkey first, then cook everything on low for 6 hours.
