Lemon Garlic Shrimp Orzo

Orzo simmered risotto-style in stock with garlic and lemon, then finished with juicy prawns (shrimp), spinach and parmesan. One pot, 25 minutes, over 40 g protein.

Method

    Pat the prawns dry and season with salt, pepper and the chilli flakes. Heat half the oil in a deep pan and sear the prawns for a minute a side until just pink. Lift out onto a plate.

    Add the remaining oil and the butter, then soften the onion with a pinch of salt. Stir in the garlic for 30 seconds.

    Tip in the orzo and toast for a minute, then pour in the stock. Simmer, stirring often so it doesn't stick, until the orzo is tender and creamy.

    Stir in the spinach, lemon zest and juice and parmesan until the spinach wilts, then return the prawns and any juices for a minute to warm through.

    Finish with parsley and black pepper. Loosen with a splash of hot water if it tightens up — it will thicken as it sits.

Substitutions

  • Swap prawns for diced chicken breast (sear 5–6 minutes until cooked through).
  • Lower-carb: use half orzo, half finely chopped courgette (zucchini) added with the spinach.
  • Vegetarian: replace prawns with a tin of drained butter beans and use vegetable stock and a vegetarian hard cheese.
