Lighter Full English Breakfast

All the fry-up favourites — back bacon, sausages, eggs, beans, mushrooms, tomato and toast — grilled and dry-fried instead of swimming in oil. Nearly 50 g protein for a proper weekend plate.

Method

    Heat the grill (broiler) to high. Grill the sausages on a rack, turning often, until browned and cooked through.

    Add the bacon and the tomatoes (cut-side up, seasoned with thyme and pepper) to the grill rack for the last 6–8 minutes, turning the bacon once.

    Meanwhile, cook the mushrooms in a dry non-stick pan over high heat until they release their water and brown, then season. Warm the beans in a small pan.

    Wipe out the mushroom pan, add the oil and fry or poach the eggs to your liking while you toast the bread.

    Plate everything up and serve hot, with brown sauce or ketchup on the side if you must.

Substitutions

  • Vegetarian: use vegetarian sausages and swap the bacon for halloumi-style grilled tofu or an extra egg.
  • Lower-carb: skip the toast and beans and double the mushrooms and tomatoes (about −30 g carbs per serving).
  • Air-fryer: cook the sausages, bacon and tomatoes at 190°C (375°F) for 12–14 minutes, adding the bacon halfway.
