Tuna Pasta Salad

The lunchbox favourite made lighter: wholewheat pasta, tuna and sweetcorn in a creamy Greek-yogurt and lemon dressing with just a spoon of mayo. 35 g protein and fine cold from the fridge.

Method

    Cook the pasta in well-salted boiling water until just al dente.

    Drain and rinse under cold water until fully cool, then drain well — wet pasta makes a watery salad.

    Mix the yogurt, mayonnaise, Dijon, lemon zest and juice, salt and plenty of black pepper in a large bowl.

    Flake in the tuna, then add the pasta, sweetcorn, cucumber, tomatoes, red onion and herbs and fold until everything is coated.

    Taste, adjust the seasoning and pack into containers. Keeps 3 days chilled; stir in a spoon of yogurt to refresh it if it looks dry.

Substitutions

  • Swap the tuna for shredded cooked chicken or tinned salmon.
  • Vegetarian: use two drained tins of chickpeas, lightly mashed, in place of the tuna.
  • Higher protein: use chickpea or lentil pasta (+8 g protein per serving).
