Turkey Meatballs Marinara

Tender baked turkey meatballs simmered in a garlicky tomato sauce, served over zucchini noodles. Comfort food that stays low-carb.

Method

    Heat the oven to 220°C. Mix mince, breadcrumbs, egg, half the parmesan, garlic, oregano, salt and pepper.

    Roll into 15 meatballs and bake on a lined tray until browned.

    Warm the marinara in a wide pan, add the meatballs and simmer so they soak up the sauce.

    Sauté the zucchini noodles for 2 minutes — just warm, not soft.

    Serve meatballs and sauce over the zucchini with basil and the remaining parmesan.

Substitutions

  • Serve over whole-wheat spaghetti instead (+45 g carbs per serving).
