Turkey Sausage Breakfast Burrito

Turkey sausage, fluffy scrambled eggs, peppers, spinach, cheddar and salsa wrapped in a wholemeal tortilla. Make four, freeze them, and breakfast is sorted.

Method

    Heat the oil in a large non-stick pan over medium-high heat. Crumble in the sausage meat and fry, breaking it up, until browned and cooked through.

    Add the onion, pepper and paprika and cook until softened, then stir in the spinach until wilted.

    Whisk the eggs and egg whites with salt and pepper, pour into the pan and gently scramble over low heat until just set.

    Warm the tortillas, then divide the filling between them. Top with cheddar and salsa, fold in the sides and roll up tightly.

    Toast seam-side down in a dry pan until golden, or cool, wrap in foil and freeze. Reheat from frozen: unwrap, microwave 2–3 minutes, then crisp in a pan.

Substitutions

  • Vegetarian: replace the sausage with 400 g drained black beans or crumbled extra-firm tofu.
  • Lower-carb: skip the tortilla and serve as a scramble bowl with avocado.
  • No turkey sausage? Season lean turkey or chicken mince with fennel seeds, sage and chilli.
