Chocolate Protein Mug Cake

A rich, gooey chocolate cake made in a mug in 90 seconds, with whey, cocoa and Greek yogurt doing the heavy lifting. Dessert with 40 g protein and no oven required.

Method

    In a large microwave-safe mug, whisk the whey, cocoa, oat flour, baking powder and sweetener with a fork so there are no lumps.

    Add the egg, yogurt and milk and mix until smooth and glossy, scraping the bottom of the mug. Drop the chocolate chips on top.

    Microwave on high for 60 seconds, then in 15-second bursts until risen and just set on top but still fudgy in the middle — overcooked whey turns rubbery.

    Rest for a minute, then eat from the mug or turn out onto a plate with a spoon of Greek yogurt and berries.

Substitutions

  • Egg-free: replace the egg with 40 g mashed banana and add 1 extra tbsp milk.
  • Lower-carb: swap the oat flour for 15 g almond flour (−7 g carbs, +6 g fat).
  • Oven version: bake in a greased ramekin at 180°C (350°F) for 12–14 minutes.
