Protein Pancakes with Berries

Fluffy oat and whey pancakes with Greek yogurt and berries. A weekend-brunch stack with over 50 g protein.

Method

    Blend the oats into a coarse flour, then blend in the whey, egg, egg whites, milk, baking powder and cinnamon. Rest the batter.

    Heat a non-stick pan over medium-low heat with a light spray of oil.

    Pour in small pancakes and flip when bubbles appear on top. Low heat stops the whey from scorching.

    Warm the berries briefly in the pan to make them jammy.

    Stack the pancakes and top with the Greek yogurt and berries.

Substitutions

  • Vegan: use pea protein, a flax egg and oat milk (the pancakes will be denser).
  • Add a mashed banana for sweetness (+105 kcal).
  • Top with 1 tsp maple syrup if you like (+17 kcal).
