Cottage Cheese Egg Bites

Coffee-shop-style egg bites blended with cottage cheese for a silky, custardy texture, studded with spinach and red pepper. Bake once, grab-and-go all week.

Method

    Heat the oven to 160°C (325°F). Lightly oil a 12-hole silicone or non-stick muffin tin and put a roasting tin of hot water on the shelf below — the steam keeps the bites soft.

    Blend the eggs, cottage cheese, half the cheddar, garlic powder, salt and pepper until completely smooth, about 30 seconds.

    Divide the spinach, red pepper and spring onions between the holes, pour over the egg mixture and top with the remaining cheddar.

    Bake until just set with a slight wobble in the centre.

    Cool in the tin for 5 minutes, then run a knife around each bite and lift out. Serve 3 per portion.

    Store in the fridge for up to 4 days; reheat for 30–40 seconds in the microwave.

Substitutions

  • Meat-eaters: add 60 g diced cooked ham or crumbled turkey bacon (+4 g protein per serving).
  • Lighter: replace 2 whole eggs with 120 ml liquid egg whites (about −3 g fat per serving).
  • Air-fryer: cook in silicone moulds at 150°C (300°F) for 12–14 minutes.
