Cottage Cheese Pancakes

Soft, golden pancakes blended from cottage cheese, eggs and oats, stacked with Greek yogurt and berries. They taste like a weekend treat but deliver 33 g protein.

Method

    Blitz the oats in a blender to a fine flour. Add the cottage cheese, eggs, baking powder, vanilla, cinnamon and a pinch of salt and blend until smooth.

    Let the batter rest so the oats hydrate and it thickens slightly.

    Heat a non-stick pan over medium-low heat and wipe with a little oil. Add 2 tbsp batter per pancake.

    Cook until bubbles appear and the edges look set, then flip and cook the other side until golden. Keep warm while you cook the rest.

    Stack and top with Greek yogurt, berries and a drizzle of maple syrup.

Substitutions

  • No blender? Use ready-made oat flour and mash the cottage cheese well with a fork.
  • Lower-carb: replace the oats with 40 g ground almonds and skip the maple syrup.
  • Extra protein: blend in 20 g vanilla whey and add a splash of milk to loosen.
