Frozen Greek Yogurt Berry Bark

Vanilla-protein Greek yogurt spread thin, scattered with berries and almonds, drizzled with dark chocolate and frozen into shards. A cold, crunchy treat that's low in fat and high in protein.

Method

    Line a baking tray (about 30 × 20 cm / 12 × 8 in) with baking paper.

    Whisk the yogurt, whey and honey until smooth, then spread on the tray about 1 cm thick.

    Scatter over the berries (halve or slice large strawberries) and almonds, pressing them in lightly.

  4. 4

    Melt the chocolate in 20-second microwave bursts and drizzle over the top with a spoon.

    Freeze until solid, then break or cut into shards. Let sit for 5 minutes out of the freezer before eating.

    Store in a freezer bag, separated with baking paper, for up to a month.

Substitutions

  • Vegan: use a thick high-protein soy yogurt, plant protein and maple syrup.
  • Lower-sugar: skip the honey and use a zero-calorie sweetener or vanilla extract to taste.
  • Use frozen berries if fresh are out of season — scatter them on straight from frozen.
