High-Protein Mac & Cheese

Creamy, cheesy macaroni with a sauce blended from cottage cheese and Greek yogurt, plus broccoli and peas stirred through. All the comfort, 34 g protein and only 10 g fat.

Method

    Cook the macaroni in well-salted boiling water. Add the broccoli for the last 3 minutes and the peas for the last 1.

    Meanwhile, blend the cottage cheese, yogurt, milk, mustard and garlic powder until completely smooth.

    Drain the pasta and veg and return to the warm pan over the lowest heat. Pour in the sauce and stir in the cheddar and half the parmesan.

    Keep stirring gently until the cheese melts and the sauce turns glossy — don't let it boil or it can split.

    Season with black pepper and serve dusted with paprika and the remaining parmesan.

Substitutions

  • Use chickpea or lentil pasta for about +8 g protein and double the fibre per serving.
  • For a baked version, tip into a dish, top with 20 g panko and grill until golden (about 4 minutes).
  • Add 200 g shredded cooked chicken or tuna for a 45 g-protein meal.
