Peanut Butter Protein Balls

No-bake bites of oats, peanut butter, whey and dark chocolate chips, rolled in ten minutes. A fudgy snack with 16 g protein per pair that beats any shop-bought bar.

Method

  1. 1

    Stir the peanut butter and honey together in a bowl (warm for 15 seconds in the microwave if very stiff).

    Add the oats, whey, flaxseed and salt and mix — it will look crumbly. Add the milk a tablespoon at a time until the mixture holds together when squeezed.

    Fold in the chocolate chips.

    Roll into 16 balls of about 27 g each with slightly damp hands and set on a lined tray.

    Chill until firm, then store in an airtight box in the fridge for up to a week or freeze for 3 months. Serve 2 per portion.

Substitutions

  • Vegan: use maple syrup instead of honey, a plant protein powder and oat milk (you may need a splash more liquid).
  • Nut-free: swap peanut butter for sunflower seed butter.
  • Lower-sugar: replace the honey with 2 tbsp sugar-free syrup and use cacao nibs instead of chocolate chips.
