High-Protein Banana Bread

A moist, naturally sweet banana loaf made with oat flour, Greek yogurt and whey, studded with walnuts and dark chocolate. Each slice is a 17 g-protein snack with no butter.

Method

    Heat the oven to 180°C (350°F) and line a 900 g (2 lb) loaf tin with baking paper.

    Mash the bananas well, then whisk in the eggs, egg whites, Greek yogurt and maple syrup.

    In another bowl mix the oat flour, whey, baking powder, bicarbonate of soda, cinnamon and a pinch of salt. Fold into the wet mix until just combined, then fold in most of the walnuts and chocolate.

    Scrape into the tin, scatter the remaining walnuts and chocolate on top and bake until risen and a skewer comes out clean. Cover loosely with foil after 30 minutes if it browns too fast.

    Cool in the tin for 10 minutes, then on a rack before slicing into 8. Keeps 4 days in an airtight tin, or freeze individual slices.

Substitutions

  • Whey-free: use 60 g extra oat flour and 100 g more Greek yogurt (about 10 g protein per slice).
  • Lower-sugar: skip the chocolate chips and maple syrup and add a mashed extra banana.
  • Muffins: bake in a 12-hole muffin tin for 20–22 minutes.
